Castel Rosso is made from raw cow's milk cheese in the Piemonte region of Italy. It's considered to be an ancient cheese and production is rare and the value is high. This cheese is aged in Italian caves for between four and six months. corated with several molds of different colors. The flavors range from mild and butter like, to tangy and sharp, not unlike cheddar. Add Castel to any cheese plate or appetizer platter with other Italian delicacies, grape mustardo and che stnut honey are both highly recommended pairings.
