Mobay is a delicious variant on the French Morbier and Carr Valley Cheese Company was awarded more than once by the American Cheese Society; in 2007 a first place in the category American Original made from sheep's milk and/or mixed milks.
Artisanal Mobay combines a layer of sheep milk cheese with a layer of goat milk cheese separated by a layer of grape vine ash and pressed together. The flavor is both delicate and rustic. Taste each layer separately and then together for 3 different flavor profiles in one great cheese.
We cut and wrap this cheese in wedges of 1 pound and 8 ounces.
